Ingredients
  

  • 2 medium English cucumbers thinly sliced (seedless preferred)
  • 1 small red or white onion thinly sliced
  • 4 oz whipped cream cheese
  • 2 tbsp mayonnaise
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 cup imitation crab smoked salmon, canned tuna, or cooked shrimp (optional)
  • 1 tbsp furikake seasoning or everything bagel seasoning optional
  • 1 tbsp spicy mayo or sriracha optional

Instructions
 

  • Thinly slice cucumbers and onion, keeping the cucumber slices crisp and thin.
  • In a mixing bowl, combine whipped cream cheese, mayonnaise, soy sauce, rice vinegar, and sesame oil until smooth and creamy.
  • Stir in optional protein such as imitation crab, smoked salmon, tuna, or shrimp if desired.
  • Gently fold cucumber and onion slices into the dressing until evenly coated.
  • Transfer salad to a serving dish and sprinkle with furikake or everything bagel seasoning.
  • Drizzle spicy mayo or sriracha on top if desired and serve immediately.

Notes

  • For extra crunch, sprinkle toasted sesame seeds on top.
  • Chill salad for 10–15 minutes before serving to enhance flavors.
  • Use a mandoline slicer for perfectly thin cucumber slices.
