Equipment

  • 1 large skillet or griddle
  • 1 spatula

Ingredients

  • 1 lb ground beef
  • 1 small onion thinly sliced
  • ½ cup smashburger sauce store-bought or homemade
  • 8 slices hearty white bread
  • 8 slices American cheese
  • 2 cups shredded Havarti cheese
  • cup sliced dill pickle chips
  • 2 tablespoons salted butter softened
  • Kosher salt to taste
  • Fresh cracked black pepper to taste

Instructions

  • Divide ground beef into 4 equal portions and heat skillet or griddle over medium-high heat.
  • Place beef balls on hot surface and smash flat with spatula, seasoning with kosher salt and black pepper.
  • Cook patties 2–3 minutes until browned and crispy, then flip and cook 1–2 minutes more. Remove and set aside.
  • In the same skillet, sauté sliced onions over medium heat until soft and caramelized, about 5–7 minutes.
  • Butter one side of each bread slice, then flip buttered side down and assemble sandwiches by layering cheese, burger patty, onions, pickles, sauce, shredded Havarti, and top with another slice of American cheese.
  • Place remaining bread slices on top with buttered side facing out.
  • Heat skillet over medium heat and grill sandwiches 3–4 minutes per side until golden brown and cheese melts, pressing gently with spatula.
  • Let sandwiches rest 1–2 minutes before slicing and serving warm.

Notes

  • Use medium-high heat for crispy crust.
  • Let sandwiches rest to prevent fillings from slipping.
  • For extra crunch, sprinkle shredded cheese on skillet before grilling for a cheese crust effect.
