Ingredients
  

  • 1 large English cucumber
  • 2 ripe avocados
  • 1 tbsp fresh lime juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp chili powder optional
  • 12 large shrimp peeled and deveined
  • Fresh parsley or cilantro for garnish

Instructions
 

  • Toss shrimp with olive oil, paprika, garlic powder, chili powder, salt, and pepper.
  • Heat a skillet over medium-high heat and cook shrimp 1 to 2 minutes per side until pink and lightly charred.
  • Slice the cucumber into ½-inch rounds and arrange on a plate.
  • Mash avocados with lime juice, salt, and pepper until creamy but textured.
  • Spoon or pipe the mashed avocado onto each cucumber slice.
  • Top each cucumber slice with one cooked shrimp.
  • Garnish with fresh parsley or cilantro and sprinkle a little extra paprika if desired.
