Equipment

  • 1 bowl used for seasoning chicken
  • 1 skillet optional, for warming and crisping burritos
  • 1 microwave optional, for warming fillings

Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup cooked rice
  • 1 can 14 oz black beans, drained and rinsed
  • 1 cup shredded cheese cheddar, Monterey Jack, or blend
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and freshly ground black pepper to taste
  • 4 –6 large flour tortillas
  • Optional toppings: salsa sour cream, avocado or guacamole, chopped cilantro, lime wedges

Instructions
 

  • Combine the cooked chicken with chili powder, cumin, salt, and pepper in a bowl and stir until evenly coated.
  • Warm the seasoned chicken, rice, and black beans in a skillet or microwave until heated through, if desired.
  • Lay a flour tortilla flat and add rice, seasoned chicken, black beans, and shredded cheese.
  • Fold the sides of the tortilla over the filling, then roll tightly to enclose all ingredients.
  • For a crispier burrito, place seam-side down in a skillet over medium heat and cook for 1–2 minutes per side until golden.
  • Serve warm with optional toppings such as salsa, sour cream, avocado, cilantro, or lime wedges.

Notes

  • Add scrambled eggs for a protein breakfast boost.
  • Include bell peppers, corn, or sautéed onions for extra flavor and nutrition.
  • Mix cheese varieties for richer melting.
  • Serve with tortilla chips and pico de gallo for a complete meal.
