Ingredients
  

  • 4 cups fresh spinach and mixed greens
  • 2 ripe peaches sliced
  • 3/4 cup fresh raspberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds toasted
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Wash and dry spinach and mixed greens thoroughly, then spread evenly in a large serving bowl.
  • Arrange sliced peaches evenly over the greens and scatter raspberries throughout for color.
  • Sprinkle crumbled feta cheese and toasted almond slices over the salad to add texture.
  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well emulsified.
  • Lightly drizzle the dressing over the salad just before serving, then toss gently or serve layered.

  • Toast almonds in a dry pan until lightly golden for best flavor.
  • Choose slightly firm peaches to hold shape when sliced.
