Ingredients
  

  • 2 lb chicken breast thinly sliced
  • 1 tbsp oil
  • 1/4 cup Nashville hot seasoning
  • 1/2 cup mayonnaise
  • 1 tbsp pickle brine
  • 2 hoagie rolls
  • 1 tbsp chopped chipotles optional, for extra heat
  • 4 slices pepper jack cheese
  • Pickles for garnish

Instructions
 

  • Heat oil in a large skillet over medium-high heat.
  • Add the thinly sliced chicken breast and cook 5 to 7 minutes until fully cooked and lightly browned, stirring occasionally.
  • Sprinkle Nashville hot seasoning over the chicken and mix well to coat evenly.
  • In a small bowl, mix mayonnaise, pickle brine, and chopped chipotles until smooth.
  • Slice hoagie rolls and toast lightly if desired.
  • Spread the spicy mayo sauce on both sides of the toasted bread.
  • Add a generous portion of the seasoned hot chicken onto each roll.
  • Place 2 slices of pepper jack cheese on each sandwich.
  • Melt the cheese by placing the sandwich in a skillet or oven for 1 to 2 minutes.
  • Top sandwiches with pickle slices, close, and serve hot.

  • Add butter to the bread before toasting for extra flavor.
  • Use Hawaiian rolls or brioche buns for a sweet contrast.
