Loaded Shrimp Stuffed Potato Feast

Equipment

  • 1 mixing bowl
  • 1 pan for cooking shrimp

Ingredients
  

  • 3 large russet potatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1/3 cup heavy cream or milk
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/2 lb 250 g shrimp, peeled and deveined
  • 1 tbsp butter
  • 2 cloves garlic minced
  • 1/2 tsp paprika
  • 1/2 tsp Cajun seasoning
  • Salt and pepper to taste
  • 1/2 cup cooked bacon diced
  • 2 tbsp parsley or green onions chopped
  • 6 chicken wings
  • 1 chicken drumstick
  • 1/3 cup BBQ sauce or sweet chili glaze
  • 1 tbsp oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Rub the potatoes with olive oil, salt, and pepper.
  • Bake potatoes directly on the oven rack for 50 to 60 minutes until tender.
  • Meanwhile, toss chicken wings and drumstick with oil, garlic powder, paprika, salt, and pepper.
  • Place chicken in the oven alongside the potatoes and bake for 35 to 40 minutes, flipping once halfway through.
  • Brush the chicken with BBQ or sweet chili glaze and bake an additional 5 minutes.
  • Slice the tops off the baked potatoes and scoop out the insides into a bowl.
  • Add butter, heavy cream or milk, shredded cheese, salt, and pepper to the potato insides and mash until creamy.
  • Toss shrimp with paprika, Cajun seasoning, salt, and pepper to season.
  • Heat butter in a pan over medium heat. Add minced garlic, then shrimp, cooking 1 to 2 minutes per side until pink and cooked through.
  • Fill potato shells with the mashed potato mixture, then top with cooked shrimp and diced bacon.
  • Sprinkle chopped parsley or green onions over the stuffed potatoes.
  • Serve the stuffed potatoes with the glazed chicken wings and drumstick on the side.

Notes

  • Add sour cream to the mash for extra creaminess.
  • Use an air fryer to crisp the wings better.
  • Drizzle garlic butter over shrimp before serving.
  • Add chili flakes for extra heat.
