Preheat oven to 400°F (200°C). Rub the potatoes with olive oil, salt, and pepper.
Bake potatoes directly on the oven rack for 50 to 60 minutes until tender.
Meanwhile, toss chicken wings and drumstick with oil, garlic powder, paprika, salt, and pepper.
Place chicken in the oven alongside the potatoes and bake for 35 to 40 minutes, flipping once halfway through.
Brush the chicken with BBQ or sweet chili glaze and bake an additional 5 minutes.
Slice the tops off the baked potatoes and scoop out the insides into a bowl.
Add butter, heavy cream or milk, shredded cheese, salt, and pepper to the potato insides and mash until creamy.
Toss shrimp with paprika, Cajun seasoning, salt, and pepper to season.
Heat butter in a pan over medium heat. Add minced garlic, then shrimp, cooking 1 to 2 minutes per side until pink and cooked through.
Fill potato shells with the mashed potato mixture, then top with cooked shrimp and diced bacon.
Sprinkle chopped parsley or green onions over the stuffed potatoes.
Serve the stuffed potatoes with the glazed chicken wings and drumstick on the side.
