Ingredients
  

  • 8 oz tortilla chips
  • 2 cups shredded cheddar-jack or Mexican blend cheese
  • ½ lb ground beef
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons water
  • ½ cup black beans drained
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • ¼ cup sliced red onions
  • ½ cup sour cream
  • ½ cup guacamole
  • 2 tablespoons chopped cilantro

Instructions
 

  • Heat a skillet over medium heat and cook ground beef until browned.
  • Add chili powder, cumin, paprika, garlic powder, salt, and pepper to the beef and mix well.
  • Add water and simmer for 2–3 minutes, then set beef aside.
  • Preheat oven to 400°F (200°C).
  • Spread tortilla chips evenly on a large oven-safe plate or tray.
  • Scatter cooked beef, black beans, corn, and shredded cheese over the chips.
  • Bake for 8–10 minutes until cheese is melted and bubbly.
  • Remove from oven and add diced tomatoes, jalapeños, and sliced red onions.
  • Drizzle sour cream and guacamole over the top and finish with chopped cilantro.
  • Serve the nachos stacked high with visible layers for a bold presentation.

  • Toast chips 3 minutes before topping for extra crispiness.
  • Add chipotle sauce or hot salsa for spice.
  • Swap beef with shredded chicken for a different protein.
  • Make vegetarian by doubling beans and corn.
