Ingredients
  

  • 3 large russet potatoes cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 5 –6 slices bacon cooked and crumbled
  • 2 tablespoons red onion finely chopped
  • 2 tablespoons green onions scallions, sliced

Instructions
 

  • Wash and cut potatoes into wedges and soak in cold water for 20 minutes to enhance crispiness, then pat completely dry.
  • Toss potato wedges with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
  • Preheat air fryer to 400°F (200°C) and arrange wedges in a single layer without overcrowding.
  • Cook wedges for 15–20 minutes, shaking the basket halfway through, until golden and crispy.
  • Sprinkle cheddar cheese, Monterey Jack cheese, and crumbled bacon over the wedges, then air fry for an additional 2–3 minutes until cheese melts.
  • Transfer wedges to a serving plate and top with finely chopped red onion and sliced green onions.
  • Serve immediately for best texture and flavor.

Notes

  • Do not overcrowd the air fryer; cook in batches if necessary.
  • Add sour cream or ranch dressing for extra taste.
  • Sprinkle with fresh herbs or chili flakes to add a spicy kick.
