Ingredients
  

  • 1 1/2 cups crushed shortbread cookies
  • 1/2 cup melted butter
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 8 oz container frozen whipped topping, thawed
  • 2 3.4 oz boxes instant lemon pudding mix
  • 3 cups cold milk

Instructions
 

  • Combine crushed shortbread cookies and melted butter in a bowl and press evenly into the bottom of a 9x9-inch dish. Refrigerate for 10 to 15 minutes to set.
  • Beat softened cream cheese with powdered sugar until smooth and creamy.
  • Fold half of the thawed whipped topping into the cream cheese mixture until light and fluffy.
  • Spread the cream cheese mixture evenly over the chilled crust.
  • Whisk lemon pudding mix with cold milk for about 2 minutes until thickened.
  • Spread the lemon pudding layer evenly over the cream cheese layer.
  • Spread the remaining whipped topping evenly over the lemon pudding.
  • Refrigerate the assembled dessert for at least 2 hours until set.
  • Slice into squares and serve chilled.
