Ingredients
  

  • 2 cups plain or vanilla Greek yogurt
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons key lime juice or fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup crushed graham crackers
  • 2 tablespoons shredded coconut optional
  • 1-2 tablespoons white chocolate chips optional
  • Extra lime zest for garnish

Instructions
 

  • Whisk Greek yogurt, honey, key lime juice, lime zest, and vanilla extract together until smooth.
  • Line a baking sheet with parchment paper and spread the yogurt mixture evenly to about 1/4 inch thickness.
  • Sprinkle crushed graham crackers evenly over the yogurt layer.
  • Add shredded coconut and white chocolate chips if using, then garnish with extra lime zest.
  • Freeze the baking sheet for at least 3 to 4 hours until the bark is completely firm.
  • Remove from freezer, break into pieces, and serve immediately or store in an airtight container in the freezer.

Notes

  • For sweeter bark, add extra honey.
  • Boost lime flavor with more zest or lime extract.
  • Store tightly covered in freezer up to 2 weeks.
  • Let sit at room temperature 1–2 minutes before eating for best texture.
