Ingredients
  

  • 24 slices pepperoni
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon Italian seasoning optional
  • 2 tablespoons low-sugar pizza sauce optional
  • cooking spray or olive oil for greasing

Instructions
 

  • Preheat the oven to 400°F (200°C). Lightly grease a mini muffin pan with cooking spray or olive oil.
  • Place one slice of pepperoni in each muffin cup, gently pressing to form a small cup shape.
  • In a small bowl, mix shredded mozzarella, grated parmesan, and Italian seasoning.
  • Spoon the cheese mixture into each pepperoni cup. Add a small dot of pizza sauce under or over the cheese if desired.
  • Bake for 10 to 12 minutes until cheese is melted, bubbly, and slightly golden on the edges.
  • Let the bites cool in the pan for 5 minutes before removing. Serve warm.

Notes

  • Omit sauce for stricter keto or carnivore diets.
  • Enhance flavor with diced jalapeños, mushrooms, or cooked sausage.
  • Store leftovers in the refrigerator up to 4 days.
  • Reheat in oven or microwave until warm and melty.
