Ingredients
  

  • 7 oz mature cheddar cheese grated
  • 1 egg
  • 4 tablespoons dark stout or ale
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon English mustard
  • 4 thick slices bread
  • freshly ground black pepper to taste

Instructions
 

  • Toast bread slices until lightly golden and place them on a baking tray.
  • In a bowl, combine grated cheddar cheese, egg, stout or ale, Worcestershire sauce, English mustard, and a pinch of black pepper; mix into a thick paste.
  • Spread the cheese mixture evenly over each toasted bread slice.
  • Place the topped bread under a hot grill or broiler for 3 to 5 minutes until the topping is melted, bubbly, and lightly golden.
  • Serve immediately while hot and bubbly.

  • Use strong mature cheddar for best flavor.
  • Rustic sourdough or country bread works well.
  • Add cayenne pepper for a spicy kick.
