Ingredients
  

  • 3 to 4 medium cucumbers thinly sliced
  • ½ cup sour cream or plain Greek yogurt
  • 1 tablespoon mayonnaise optional
  • 1 tablespoon fresh lemon juice or apple cider vinegar
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese
  • Optional: chopped fresh dill or parsley for garnish

Instructions
 

  • Wash and thinly slice the cucumbers using a sharp knife or mandoline for even slices.
  • In a bowl, whisk together sour cream or yogurt, optional mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth.
  • Add the sliced cucumbers to the dressing and gently toss to coat evenly.
  • Sprinkle shredded cheddar cheese over the top, mixing some in if desired.
  • Finish with a light sprinkle of extra black pepper and fresh herbs if using. Serve immediately.

Notes

  • For added crunch, include crispy bacon bits or sunflower seeds.
  • Add a pinch of red pepper flakes for spice.
