- 1 small onion finely chopped
- 2 –3 garlic cloves minced
- 1 packet taco seasoning
- 1 can 14 oz diced tomatoes with green chiles
- 1 can 14 oz refried beans or black beans, drained
- 2 –3 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
- Optional toppings: sliced jalapeños black olives, sour cream, green onions, cilantro
- Tortilla chips for serving
Cook ground beef and chopped onion in a skillet over medium heat until browned, breaking it up with a spoon, then drain excess fat.
Add minced garlic and taco seasoning to the beef mixture; cook for 1 minute until fragrant.
Stir in diced tomatoes with green chiles and simmer for a few minutes until heated through.
Spread the refried or black beans evenly in an oven-safe baking dish.
Top the beans with the seasoned beef mixture and sprinkle shredded cheese generously on top.
