Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 –3 garlic cloves minced
  • 1 packet taco seasoning
  • 1 can 14 oz diced tomatoes with green chiles
  • 1 can 14 oz refried beans or black beans, drained
  • 2 –3 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
  • Optional toppings: sliced jalapeños black olives, sour cream, green onions, cilantro
  • Tortilla chips for serving

Instructions
 

  • Cook ground beef and chopped onion in a skillet over medium heat until browned, breaking it up with a spoon, then drain excess fat.
  • Add minced garlic and taco seasoning to the beef mixture; cook for 1 minute until fragrant.
  • Stir in diced tomatoes with green chiles and simmer for a few minutes until heated through.
  • Spread the refried or black beans evenly in an oven-safe baking dish.
  • Top the beans with the seasoned beef mixture and sprinkle shredded cheese generously on top.
  • Bake at 350 °F (180 °C) for 10–15 minutes until the cheese is melted and bubbly.
  • Remove from oven, add optional toppings, and serve warm with tortilla chips.

Notes

  • Increase spice level with hot sauce or extra jalapeños.
  • Use black or pinto beans as alternatives to refried beans.
  • A cheese blend improves flavor and melt quality.
  • Serve with salsa, guacamole, or pico de gallo for variety.
