- 2 cups cooked chicken shredded or diced
- ½ to ¾ cup BBQ sauce adjust to taste
- 1½ to 2 cups shredded cheese cheddar, Monterey Jack, or blend
- 8 flour tortillas 8-inch
- 1 small red onion thinly sliced (optional)
- Sliced jalapeños cilantro, or green onions (optional)
- Butter or oil for cooking
Combine cooked chicken and BBQ sauce in a bowl until chicken is evenly coated.
Place one tortilla flat and sprinkle shredded cheese over half of it.
Add the BBQ chicken mixture on top of the cheese, then add more cheese if desired.
Fold the tortilla over to enclose the filling.
Heat a skillet over medium heat and add butter or oil.
Cook the folded quesadilla until the bottom is golden and cheese begins to melt, about 2 to 3 minutes.
Flip and cook the other side until golden and cheese is melted.
Repeat with remaining tortillas and filling.
Cut quesadillas into wedges and serve warm with extra BBQ sauce, sour cream, or favorite dips.
