- Salt and freshly ground black pepper to taste
- 1 teaspoon garlic powder
- 1 to 2 tablespoons olive oil
- 8 slices bacon cooked and crumbled
- 1 small shallot or ½ small onion finely sliced
- 1 cup fresh or jarred cranberries or dried cranberries rehydrated
- 1 to 1½ cups brie cheese sliced or cubed
- Optional garnish: fresh thyme or parsley
Season chicken breasts with salt, pepper, and garlic powder on both sides.
Heat olive oil in a skillet over medium-high heat and sear chicken until golden, about 4 to 5 minutes per side. Transfer to a baking dish.
Add more oil to the skillet if needed, then sauté the shallot or onion until softened.
Add cranberries to the skillet and cook briefly until they begin to soften.
Spoon the cranberry mixture evenly over the chicken breasts.
Top chicken with slices or cubes of brie cheese and sprinkle crumbled bacon on top.
Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, until chicken is cooked through and brie is melted and bubbly.
