Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon garlic powder
  • 1 to 2 tablespoons olive oil
  • 8 slices bacon cooked and crumbled
  • 1 small shallot or ½ small onion finely sliced
  • 1 cup fresh or jarred cranberries or dried cranberries rehydrated
  • 1 to 1½ cups brie cheese sliced or cubed
  • Optional garnish: fresh thyme or parsley

Instructions
 

  • Season chicken breasts with salt, pepper, and garlic powder on both sides.
  • Heat olive oil in a skillet over medium-high heat and sear chicken until golden, about 4 to 5 minutes per side. Transfer to a baking dish.
  • Add more oil to the skillet if needed, then sauté the shallot or onion until softened.
  • Add cranberries to the skillet and cook briefly until they begin to soften.
  • Spoon the cranberry mixture evenly over the chicken breasts.
  • Top chicken with slices or cubes of brie cheese and sprinkle crumbled bacon on top.
  • Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, until chicken is cooked through and brie is melted and bubbly.
  • Garnish with fresh thyme or parsley if desired and serve warm.

Notes

  • Use fresh cranberries for tartness or dried for sweetness and chew.
  • Camembert can be substituted for brie cheese.
  • Add balsamic glaze or honey for a sweet flavor twist.
  • Serve with roasted vegetables, mashed potatoes, or a green salad.
