Ingredients
  

  • 2 ripe avocados diced
  • 2 cups cherry or grape tomatoes halved
  • 1 to 1½ cups corn kernels fresh, grilled, or thawed
  • ¼ red onion thinly sliced
  • 2 to 3 tbsp fresh cilantro or parsley chopped
  • 2 to 3 tbsp olive oil
  • 1 to 2 tbsp lime or lemon juice
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Combine diced avocados, halved tomatoes, corn kernels, and sliced red onion in a large bowl.
  • Whisk olive oil, lime or lemon juice, salt, and pepper together in a small bowl to make the dressing.
