Equipment

Ingredients
  

  • cups strong brewed coffee cooled
  • cup granulated sugar divided
  • 2 large eggs separated
  • 8 oz mascarpone cheese softened
  • ½ teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup ladyfingers
  • unsweetened cocoa powder for dusting

Instructions
 

  • Brew strong coffee and allow it to cool completely.
  • Whisk egg yolks with half of the sugar until pale and creamy, then mix in mascarpone cheese and vanilla extract until smooth.
  • Whip heavy cream in a separate bowl until soft peaks form.
  • Beat egg whites with remaining sugar until stiff peaks form.
  • Gently fold whipped cream into mascarpone mixture, then fold in egg whites carefully to keep mixture light.
  • Dip ladyfingers quickly into cooled coffee without soaking and arrange a layer in the serving dish.
  • Spread half of the mascarpone cream over the ladyfingers, then repeat with another layer of coffee-dipped ladyfingers and remaining cream.
  • Dust the top generously with unsweetened cocoa powder.
  • Chill in the refrigerator for 1–2 hours before serving to develop flavor and texture.

Notes

  • Add 1–2 tablespoons coffee liqueur for a traditional flavor.
  • Use espresso instead of regular coffee for a stronger taste.
  • Chill overnight for cleaner slices and enhanced flavors.
